Yummy and (Mostly) Organic Chocolate Chip Cookies

After browsing Pinterest for many hours today, I was inspired to do some baking...and nothing beats classic chocolate chip cookies! While I used the Hershey's CHIPITS recipe (as it's my personal favorite), I decided to change it up a bit by using as many organic/fair trade ingredients as I could find. I believe it's very important to be aware of the quality of food you put into your body and I am trying to make an effort in my own life to choose products that are as organic, GMO free, etc. as possible. Also, it's always great to support local companies and those who are involved in fair trade initiatives (and the like).

So, if you would like to try these fabulous (mostly) organic cookies, here is the recipe below (all ingredients can be seen in the photo above):

1. Preheat oven to 375 degrees Farehneit (or 190 degrees Celcius).

2. Beat 1 cup of softened butter (I used Avalon Organic Butter) with 1 cup of packed brown sugar and 1/2 cup of granulated sugar (I used Wholesome Organic Sugar, which is also fair trade and GMO free).

3. Beat in 2 eggs (I used local organic brown eggs) and 1 1/2tsp of vanilla extract (I used an organic brand).

4. Stir in 2 cups of all-purpose flour (I used Anita's Organic Mill White Flour) with 1tsp of baking soda and 1/2tsp of salt in a seperate bowl. Gradually beat into the butter mixture.

5. Stir in 2 cups of semi-sweet chocolate chips (I used Camino Semi-sweet Chocolate Chips, which are both organic and fair trade).

6. Drop 1tbsp portions of dough onto ungreased baking sheets.

7. Bake for 10-12 minutes.

8. Let cool on a wire rack.

9. Enjoy!

This recipe makes approximately 4 dozen cookies and they should have a crunchy-on-the-outside-soft-on-the-inside texture. I also found that I needed a bit more flour than what was called for, so be sure to test the consistency for yourself to ensure the dough is firm enough before you bake the cookies. Best served with a cold glass of milk (or vanilla almond milk for all of you who are lactose intolerant like myself). :)
